Apple Raisin Cake

This Apple Raisin Cake is elegant and delicious with big chunks of apple and plump raisins. Preparing this cake is simple – the recipe comes together as fast as a cake from a mix and doesn’t even require an electric mixer. This family favorite is wonderful with hot tea on a brisk autumn afternoon or when watching the snow fall from a warm nook by the fireplace.

Apple Raisin Cake

Serves 12
  • 2/3 cup Unrefined Sugar
  • 2 eggs
  • 1/2 cup Sunflower Oil (or other oil of your choice)
  • 1 teaspoon Vanilla Extract
  • 1 3/4 cups All-Purpose Flour (or a 50%-50% mix of whole wheat & all-purpose flours)
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Fine Sea Salt
  • 3 cups Apples, roughly chopped
  • 1 cup Seedless Raisins
  1. Preheat the oven to 350 Degrees Fahrenheit
  2. In a medium mixing bowl combine sugar, eggs, oil and vanilla. Stir until well blended.
  3. Stir in flour, cinnamon, baking soda and salt. Mix well.
  4. Fold in apples and raisins
  5. Spoon mixture into a greased and floured 13”x 9” baking pan.
  6. Bake for 45 minutes.
