Ayurvedic Beet Salad

Harvested in the autumn, beets are a delightful winter food as they are sweet and warm. Beets fortify the blood, cleanse the lymphatic system, and provide a myriad of healing benefits to the digestive system. In addition, they are rich in vitamin A, minerals and folic acid, and are terrific for overall female health.

In our recipe for Beet Salad, the walnuts add a nice crunch and are a stimulating food for the brain.

Ayurvedic Beet Salad

Serves 3

3 Medium Beets
1/3 cup Walnuts, broken in pieces
1 handful Prunes, chopped (optional)


1/4 cup Extra Virgin Olive Oil
1/4 cup Lemon Juice, freshly squeezed
1/2 tablespoon Fresh Rosemary Leaves, minced
1 tablespoon Honey (for Kapha & Vata) or Maple Syrup (for Pitta & Vata)
1/4 teaspoon Salt, or to taste
Freshly ground Black Pepper to taste

  1. Boil beets in water until beets are soft and tender. Cool and cut them into approximately 1/2-inch cubes.
  2. In a large bowl, combine all salad ingredients and gently toss.
  3. In a small bowl, combine all dressing ingredients and mix well.
  4. Pour the dressing over the salad, toss again, and serve. Enjoy!

      Melissa, this beet salad is excellent for balancing Vata! I recommend enjoying it at room temperature or even slightly warmer.
