Pan Roasted Asparagus

Asparagus is one of the first spring vegetables. Although itís available in the supermarket all year around, asparagus is almost a different vegetable when eaten fresh. Fresh asparagus needs only the simplest of cooking techniques to unleash its charming sweetness. I suggest growing it in your garden or picking some up at your local farmerís market and preparing right away.

In addition to being delightfully tasty, this super vegetable has tremendous health benefits. It is good for reducing inflammation which helps the body to deal with arthritis, asthma, and rheumatism. Asparagus cleans the kidneys, lowers cholesterol, detoxifies the body, fights cancer, and improves an array of womenís health issues.

Pan Roasted Asparagus

Serves 4
  • 1 pound Asparagus, trimmed
  • 2 tablespoon Ghee
  • Salt and Freshly Ground Black Pepper to taste
  1. Heat the ghee in a cast-iron skillet over medium heat until quite hot. Add the asparagus. Cook turning the asparagus from side to side occasionally, until tender. About 3 minutes for the skinny pieces and up to 7 minutes for the thicker ones.
  2. Season with salt and pepper.
  3. Transfer the asparagus to a plate and serve.
