Roasted Brussels Sprouts with Hazelnuts and Apples

Do you eat Brussels sprouts? They’re jam-packed with vital nutrients, provide a high source of clean vegetable protein, detoxify the liver, and fight cancer!

They taste great, especially with the help of some friends like in this super-simple recipe. Brussels sprouts become sweet and nutty when browned, the apples provide some healthy lusciousness, and the hazelnuts add a welcome crunch. Roasted Brussels Sprouts with Hazelnuts and Apples

Serves 2
  • 1 pound Brussels Sprouts
  • 2 tablespoons Ghee
  • 1/4 cup Hazelnuts, chopped
  • 1 Apple, peeled, cored and sliced into pieces
  • Sea Salt, to taste
  • Freshly Ground Black Pepper, to taste
  1. Preheat oven to 375 degrees Fahrenheit.
  2. Wash Brussels sprouts. Cut off ends and discard. Cut each sprout in half longwise (or quarters for larger sprouts).
  3. Slightly dry-roast hazelnuts in a large oven-safe skillet over medium heat for about 5 minutes. Transfer hazelnuts to a bowl and set aside.
  4. Using the same skillet and heat as step 3: Add the ghee to the skillet. When the ghee melts, add the Brussels sprouts. Stir gently to evenly coat the sprouts with ghee. Cook Brussels sprouts in skillet for about 5 minutes or until they become a bit caramelized and get a bit golden brown.
  5. Add the apples and hazelnuts, season with salt and pepper. Put the skillet in the oven and roast for about 30 minutes or until the Brussels sprouts are tender and golden-browned.
